Here are three different Biryani Rice recipes for you to choose from. Each one has its unique flavor profile, so feel free to pick the one that suits your taste:

  1. Biryani Rice (Kuska Rice):
    • Ingredients:
      • 1 cup aged Basmati rice
      • 1¾ cups water (or stock, 1¼ cups for Instant Pot)
      • 2 tablespoons oil or ghee
      • ⅓ cup thinly sliced onions
      • 1 teaspoon ginger-garlic paste
      • ¼ cup chopped tomatoes (deseeded)
      • 3 tablespoons mint leaves (chopped)
      • 2 tablespoons fresh yogurt (curd)
      • ⅓ teaspoon ground turmeric
      • ½ teaspoon red chili powder (adjust to taste)
      • ¾ teaspoon Biryani masala powder (or garam masala)
      • 1 small bay leaf (Indian tej patta)
      • 3 cloves
      • 2-3 green cardamoms
      • 1 star anise (optional)
      • ⅓ teaspoon shahi jeera (or cumin seeds)
      • 1 small strand of mace (javitri, optional)
      • 1-inch cinnamon piece
    • Instructions:
      1. Wash and soak the Basmati rice for 20-30 minutes.
      2. Heat oil or ghee in a pot or pressure cooker.
      3. Add whole spices (bay leaf, cloves, green cardamoms, star anise, shahi jeera, mace, and cinnamon).
      4. Add sliced onions and sauté until golden.
      5. Stir in ginger-garlic paste and chopped tomatoes.
      6. Add mint leaves, turmeric, red chili powder, and Biryani masala.
      7. Pour in yogurt and mix well.
      8. Add drained rice and sauté for a minute.
      9. Add water, salt, and cook until rice is done.
  2. Authentic Biryani Rice:
    • Ingredients:
      • Basmati rice (rinsed)
      • Ghee
      • Cinnamon stick
      • Bay leaf
      • Curry leaves
      • Turmeric
      • Clove
      • Cardamom
      • Ginger
    • Instructions:
      1. Melt ghee in a wide-bottomed saucepan.
      2. Add cinnamon stick, bay leaf, and curry leaves.
      3. Stir-fry rinsed Basmati rice until slightly toasted.
      4. Add turmeric, clove, cardamom, and ginger.
  3. Healthy Biryani Rice (Plain Biryani):
    • Ingredients:
      • Good quality Basmati rice
      • Aromatic herbs and spices
