Mushroom Masala Curry Recipe
Ingredients:
- 230 grams (8 ounces) sliced mushrooms
- 1 cup cubed onions (about 1 large onion)
- 1 cup cubed tomatoes (about 2 large tomatoes)
- ½ inch ginger (chopped)
- 3 cloves garlic (chopped)
- 12 cashew nuts (or almonds)
- 2 tablespoons oil (or butter)
- 1 teaspoon garam masala
- ¾ teaspoon red chili powder
- 1 teaspoon coriander powder (optional)
- ¼ teaspoon salt (or as needed)
- ¼ teaspoon kasuri methi (optional, dried fenugreek leaves)
- 1 small bay leaf (or 10 curry leaves)
- 2 green cardamoms
- 1-inch cinnamon piece
- 2 tablespoons finely chopped coriander leaves (cilantro)
- 3 tablespoons cream (optional)
Instructions:
- Boil the Onions: Pour 2 cups of water into a small pot and bring it to a rolling boil. Add 1 cup of onions and boil for 4 to 5 minutes until they turn transparent. Drain the water and add the onions to a blender. This step removes the raw smell and bitterness from the onions.
