Mushroom Masala Curry Recipe

Ingredients:

  • 230 grams (8 ounces) sliced mushrooms
  • 1 cup cubed onions (about 1 large onion)
  • 1 cup cubed tomatoes (about 2 large tomatoes)
  • ½ inch ginger (chopped)
  • 3 cloves garlic (chopped)
  • 12 cashew nuts (or almonds)
  • 2 tablespoons oil (or butter)
  • 1 teaspoon garam masala
  • ¾ teaspoon red chili powder
  • 1 teaspoon coriander powder (optional)
  • ¼ teaspoon salt (or as needed)
  • ¼ teaspoon kasuri methi (optional, dried fenugreek leaves)
  • 1 small bay leaf (or 10 curry leaves)
  • 2 green cardamoms
  • 1-inch cinnamon piece
  • 2 tablespoons finely chopped coriander leaves (cilantro)
  • 3 tablespoons cream (optional)

Instructions:

  1. Boil the Onions: Pour 2 cups of water into a small pot and bring it to a rolling boil. Add 1 cup of onions and boil for 4 to 5 minutes until they turn transparent. Drain the water and add the onions to a blender. This step removes the raw smell and bitterness from the onions.
  2. Prepare the Paste: In the same blender, add 1 cup tomatoes½ inch ginger2 to 3 garlic cloves, and 12 cashew nuts (or almonds). Blend to a fine paste without adding water.
  3. Make the Gravy:
    • Heat a pan with 2 tablespoons of oil. Add a small piece of bay leaf2 green cardamoms, and 1 small cinnamon stick (optional).
    • When the oil is slightly hot and the spices sizzle, pour in the onion-tomato puree.
    • Cook the puree until the oil separates and the mixture thickens.
  4. Add Spices: Stir in 1 teaspoon garam masala¾ teaspoon red chili powder1 teaspoon coriander powder (optional), and ¼ teaspoon salt (adjust to taste).
  5. Finish the Dish:
    • Add the sliced mushrooms and mix well.
    • Cover and simmer for 8 to 10 minutes on medium-low flame until the mushrooms are tender.
    • If desired, add 3 tablespoons of cream for richness.
  6. Garnish: Sprinkle with finely chopped coriander leaves.
